Egg, duck, whole, fresh, raw

3 medium, such as Granny Smith or Fuji, peeled, cored, and thinly sliced

Spices, cinnamon, ground

Preheat your oven to 180°C (350°F). Lightly grease and line a 20x20 cm (8x8 inch) square baking dish with baking paper, leaving an overhang on two sides for easy removal.

Make the Base: In a large bowl, combine the plain flour and 100 g caster sugar. Add the cold, diced butter and rub it into the flour mixture with your fingertips until it resembles coarse breadcrumbs. Add the beaten egg and mix until a soft dough forms. Press the dough evenly into the prepared baking dish.

Prepare the Filling: In another bowl, combine the thinly sliced apples with the ground cinnamon and 25 g caster sugar. Toss gently to coat the apple slices.

Assemble and Bake: Arrange the apple filling evenly over the dough base in the baking dish.

Bake for 35-40 minutes, or until the apples are tender and the base is golden brown. Remove from the oven and let it cool in the dish for at least 15 minutes.

Make the Glaze: While the slice is cooling, whisk together the icing sugar and milk (or water) in a small bowl until smooth. If the glaze is too thick, add a tiny bit more milk; if too thin, add a little more icing sugar.

Once the slice has cooled slightly (it should still be warm but not hot), drizzle the glaze evenly over the top. Let the glaze set for a few minutes before slicing and serving.
