Sugar, white, granulated or lump
½ cup
Milk, whole, 3.25% milkfat, with added vitamin D
2 tablespoons
Bananas, raw
3 very ripe bananas
Wheat flour, white, all-purpose, unenriched
1.5 cups
Butter, salted
melted
Egg, whole, raw, fresh
1 large egg

Instructions
Preheat the oven to 175°C. Grease a standard loaf tin.
Mash the bananas thoroughly in a large bowl.
Stir in the melted butter, then the sugar, egg and vanilla.
Add the flour, baking soda, cinnamon and a pinch of salt. Stir until just combined — don't overmix.
Pour the batter into the prepared tin.
Bake for 55–65 minutes until a skewer comes out clean.
Cool in the tin for 10 minutes, then turn out onto a rack.
Slice and serve warm with butter.
