Avocado, raw

2 medium avocados

200 g

Egg, quail, whole, fresh, raw

2 large eggs

100 g

Bread, sourdough, white, loaf, as purchased

2 thick slices

120 g

Lemons, raw, without peel

juice of ½ lemon

15 g

Oil, olive, extra virgin

drizzle

Bring a medium saucepan of water to a gentle simmer. Add a splash of white vinegar.

Halve and stone the avocados. Scoop the flesh into a bowl and mash with a fork. Season with lemon juice, salt and pepper.

Toast the sourdough slices until golden and crisp.

Create a gentle whirlpool in the simmering water. Crack each egg into a small cup then slide it into the water. Poach for 3 minutes for a runny yolk.

Spread the mashed avocado generously over each piece of toast.

Remove the poached eggs with a slotted spoon and blot dry on a paper towel. Place on top of the avocado.

Season with salt, pepper and chilli flakes. Serve immediately.
