Ingredients
Bananas, raw
3 very ripe bananas
Egg, quail, whole, fresh, raw
1 large egg
Butter, stick, unsalted
melted
Flour, wheat, all-purpose, enriched, bleached
1.5 cups
Milk, cow, whole, evaporated, fluid
2 tablespoons
Sugar, white, fruit sugar (fructose), granulated or lump

Instructions
Preheat the oven to 175°C. Grease a standard loaf tin.
Mash the bananas thoroughly in a large bowl.
Stir in the melted butter, then the sugar, egg and vanilla.
Add the flour, baking soda, cinnamon and a pinch of salt. Stir until just combined — don't overmix.
Pour the batter into the prepared tin.
Bake for 55–65 minutes until a skewer comes out clean.
Cool in the tin for 10 minutes, then turn out onto a rack.
Slice and serve warm with butter.
