Ingredients
Chicken, breast, boneless, skinless, raw
2 breasts
Lettuce, cos or romaine, raw
1 head, chopped
Cheese, parmesan, grated, refrigerated
shaved
Yogurt, Greek, whole, plain, CHOBANI
for dressing
Lemons, raw, without peel
juice of 1 lemon
Garlic, raw
1 clove, minced
Oil, olive, extra virgin
for cooking
Bread, sourdough, white, loaf, as purchased
torn into croutons

Instructions
Season the chicken breasts with salt, pepper and a drizzle of olive oil.
Cook in a pan or grill pan over medium-high heat for 5–6 minutes each side until cooked through. Set aside to rest for 5 minutes, then slice.
Make the dressing: whisk together yoghurt, lemon juice, garlic, parmesan and a pinch of salt until smooth.
Tear or chop the romaine into bite-sized pieces. Place in a large bowl.
Add the croutons and drizzle over the dressing. Toss to coat.
Top with sliced chicken and shaved parmesan.
Serve immediately.
