Ingredients
Mango, Ataulfo, peeled, raw
2 mangoes — 1 blended, 1 sliced
Nuts, coconut milk, canned (liquid expressed from grated meat and water)
1 can
Seeds, chia seeds, dried
4 tablespoons
Melon, Honeydew, flesh, raw
1 tablespoon

Instructions
Whisk together the coconut milk, chia seeds and honey in a jar or bowl.
Let sit for 5 minutes, then whisk again to prevent clumping.
Cover and refrigerate overnight (or for at least 4 hours).
Blend the mango until smooth to make the mango layer.
In the morning, stir the chia pudding. If too thick, add a little more coconut milk.
Layer the chia pudding and mango puree in a glass or bowl.
Top with fresh mango slices and a sprinkle of coconut flakes.
