Preheat oven to 180°C (350°F) and line baking trays with parchment.

Beat softened butter with brown and white sugar until light and fluffy.

Fold in flour, bicarbonate of soda, and salt until just combined.

Scoop heaped tablespoons onto baking trays, spacing well apart.
