Whisk together flour, baking powder, bicarbonate of soda, sugar and salt.

In a separate bowl, whisk buttermilk, egg, and melted butter.

Pour wet into dry and stir until just combined — lumps are fine, don't overmix.

Heat a griddle or non-stick pan over medium heat and brush with butter.

Ladle ¼ cup of batter per pancake. Cook until bubbles form on top, then flip.

Cook for 1–2 minutes until golden.
