Preheat oven to 170°C. Grease and line a 900g loaf tin.

Mash 3 very ripe bananas in a large bowl.

Whisk in melted butter, brown sugar, eggs, and vanilla.

Fold in flour, bicarbonate of soda, and a pinch of salt until just combined.

Pour into tin and sprinkle with a little extra brown sugar.

Bake for 55–65 minutes until a skewer comes out clean.

Cool in tin for 10 minutes, then turn out.
